Hopefully you caught on to my hint in the title. If not no worries just take one look at these beautifully colored brownies and take a guess? No there was not any food coloring in these.... give up?
They have red beets in them! Yup! Beets, as in the root vegetable. As in I have lost my mind.
Just kidding :)
So why are beets aMAEzing?!
They contain Immune boosting Vitamin C, Fiber, and essential minerals like Potassium ( important for nerve and muscle function), Manganese ( great for your bones, liver, kidneys and pancreas). They contian cancer fighting properties. They can also boost stamina, fight inflammation, and help your body detox! So after a night out with girls get yourself some beets! ok enough with the facts, lets get to the recipe!
I have seen this concept a few times and thought I needed to give it a try. I just happen to have some Red Velvet Protein from Cellucor and thought I might as well go for it. I have two recipes for you to try. The first is with a lot of specific flavors like the cellucor protein. The second is simpler, with ingredients you probably have.
Serves 16
Ingredients
- 8oz Red Beet ( peeled )
- 2 TB Coconut Flour
- 20g Cookies and Cream My Oatmeal ( ground )
- 6 oz Almond Milk
- 2 Egg Whites
- 1 oz Greek Yogurt
- 1 scoop Red Velvet Cellucor Protein
- 1/2 scoop Smores Cellucor Protein
- 1 TB Dark Cocoa Powder
- 1 TB Coconut Oil (melted)
- 21g Lillys Chocolate Chips
- 1 TB Sugar Free Toasted Marshmallow Coffee Creamer ( optional )
- Stevia to taste
- 1/2 Tsp Vanilla Extract
Place all of your ingredients in a food processor and puree! Thats it!
Preheat your over to 350F and spray a non-stick pan with coconut oil spray. Bake for about 30-35 minutes. Let cool. ( I placed mine in the refrigerator )

For the frosting I just whipped up some Cottage Cheese, Corfetti Cellucor Protein , Vanilla, Stevia and Coconut Oil ! Thats it!
Simple Recipe :)
Serves 15
Ingredients
- 1/2 Cup Red Beet
- 21/4 Oat Flour ( you can just grind up oats )
- 1/4 cup Cocoa Powder
- 1/3 cup milk of choice ( more if needed )
- 1/4 cup melted Coconut oil or Vegetable oil
- 1/2 cup back beans ( or garbanzo )
- 1/2 cup Maple Syrup ( or agave )
- 1/2 tsp Baking Powder
- pinch of salt
- 1 tsp Vanilla Extract
- 1/2 cup Chocolate Chips
Preheat your oven to 375F
Blend all of your ingredients minus the chocolate chips. Once completely pureed stir in the chocolate chips. In a parchment lined brownie pan, about 13x9 pour in your batter and with spatula smooth the top. Add more chocolate chips of you like :) Bake for 22-25 minutes. If need be, add a few minutes if it is not fully cooked. Once done, Let it cool.
